STRAWBERRY PIE

Remember Shoney restaurants? This recipe is suppose to be their Strawberry Pie, not sure if it is but it's delicious anyway! EZ, too.

Strawberry Pie
Yield 2 pies

2 cups sugar
1/2 cup cornstarch
2 cups cold water
6 teaspoons Karo white/clear syrup
1 tablespoon vanilla
1 small box strawberry jello
2 cups fresh strawberries, sliced
2 frozen pie crusts, regular not deep dish, baked

Combine first 5 ingredients in saucepan and bring to a boil, cook until thick and clear.
Remove from heat and add powdered jello, stir till combined and jello is melted.
Arrange strawberries in baked pie crust.
Pour hot mixture over berries.
Chill and top with Cool Whip.

I add the Cool Whip after the hot mixture has cooled in the frig. You can add it by the spoon on each slice just before serving or cover each pie like frosting a cake. It's up to you, just make sure the Cool Whip is chilled to go along with the cold pie.
