HONEYBUN CAKE

This recipe is from a long time friend. She is my forever forty friend, long story. Her name is Sunny, well, her nickname is Sunny. Her real name is very different than Sunny. Sunny fits her much better! Her notes are included.

Honeybun Cake

1 box yellow cake mix
3/4 cup vegetable oil
4 eggs
1/2 cup water
8 oz sour cream (plus an extra dollop, if desired)

Mix all ingredients together. Pour half of batter into greased 13 x 9 pan.

Mix together: 1 cup firmly packed light brown sugar*, 1-1/2 Tblsp cinnamon

Sprinkle half of the cinnamon and sugar mixture over the cake batter. Pour in remaining half of batter, spreading over cinnamon/sugar. Top with remaining cinnamon/sugar mixture. Swirl mixture with spatula or knife to spread cinnamon/sugar mixture through cake.

Bake at 350 for 35 to 40 minutes.

Mix glaze of 2 cups powdered sugar, 1 tsp. vanilla extract and enough milk to spread easily.** Drizzle glaze over top of warm cake.

*Sometimes I pay the difference to get the measured cups of brown sugar. This saves measuring.

**I put enough milk to make a glaze that will pour rather than spread over cake. This soaks into the cake and helps make it more moist.

Finished cake looks like a huge honeybun and is really good. Like a sweet coffee cake. It's good anytime, but boy would it be good in the winter with a pot of coffee!!

This is going to be the last Sweet Saturday post for awhile. The Hubbie is off on Saturdays now so I want to spend more time with him. I may switch to a different day for the sweets postings. We'll see.
