CINNAMON BLINTZES

This is a recipe from years ago that is so good to freeze ahead.

2 loaves thin white bread, fresh
2 8 oz pkgs cream cheese
2 egg yolks (not the whites, just the yolks)
1/2 cup sugar
1 cup margarine
1 cup brown sugar
2-3 tsp cinnamon

Trim crust off of bread and roll bread thin. Cream together the cream cheese, egg yolks and sugar. Spread thin on bread slices to edge of bread. Roll up. Melt margarine and in separate bowl mix brown sugar and cinnamon together. Dip rolls first in margarine then in cinnamon-sugar mixture. Place close together on cookie sheets. Freeze 5 mins. Remove and slice each roll in half. Then refreeze in freezer bags until ready to use. Put in oven straight from freezer on greased cookie sheet. Bake - 350 - 15-20 mins Yields 8 dz.
Comments: Great for breakfast, brunch or coffees. Heat approximately 10 seconds in microwave. Increase length of time in proportion to number of blintzes being heated.

I prefer the oven to heat and real BUTTER. Plus I just use PAM and do not grease the cookie sheets. These are wonderful for the holidays!
